I logged on with Ves'tai and now his invocations that combine a shape with an essence are gone and they don't appear in his spell book like they should.

This is most likely because Ves'tai was an epic-level character, and Max hasn't fixed the epic levels yet. When logging on with that character, it knocked him back to level 20, which probably bugged him up. Once the level cap is raised to 30 this problem should go away.
You can probably still access your essence/shape combos via the quickspell menu. I can't confirm that though, since I can't even log in as Alistor (or any of my epic characters, for that matter) due to item level restrictions.

Full level-30 advancement has been reimplemented now, so I was able to log in with Alistor. Everything is exactly as I left it with him, spellbook included.
Try logging in with Ves'tai again and see if anything is different.

Logged in with Ves and he still can't add an essence to a blast shape either through his spell book or the quick cast menu.
